We ate such a happy dinner last night! (It was mostly an accident, but once I realized it was making a face, I had to make it happen.) The ingredients of the face are as follows: Eyes: Papusas (recipe from Vegan Lunch Box Around the World), topped with cheese, chipotle salsa, and sour cream
Mouth: Frozen southwest veggie blend from Target
I think the vegan gods were punishing me for de-veganizing this recipe by making me mess up on the ingredients. I couldn't find anything labeled "masa harina" as the recipe demanded, so I bought fine corn meal. Alas, I made water mixed with corn meal! But I added seasoning, cooked it down, and made it work. | My Lunch This Week! |

I'm on lunch and just ate some of this, so I thought I would share. I made a huge batch of pasta salad last night, inspired by a recipe from my aunt from years & years ago. I only vaguely remember what she included, but I know it was yummy and featured broccoli, mozzarella, and obviously, pasta. So, mine: 8oz (or so) rotini, cooked until al dente, drained, rinsed under cold water Fresh broccoli florets (I used a huge stalk) Grape tomatoes, chopped in half (about 2/3 package) Mozzarella, cubed (about 1/2 a block) Lightlife Smart Deli "pepperoni" (about 1/2 a box) Asiago Balsamic vinaigrette (any Italian style dressing would do), to taste Mix. Enjoy! It's super-simple, but I never would've thought of mixing those ingredients on my own, so I thought I would share.

Last night I made stromboli for the first time. It was based on the recipe from Vegan Lunch Box Around the World, but with different veggies (and with cheese). I made mine with zucchini, mushrooms, onion, and mozzarella. I thought it was going to explode in the oven, but it was still basically sealed up. I actually get a week off for Spring Break this year! And I will be spending the majority of it on an actual vacation! At the beach! My mom and dad used to own a house in Destin, FL before I was born and shortly afterwards. My dad hasn't seen it since then, so he booked a condo and invited us to join them (him + stepmom). They'll get to escape the snow, and I'll get to spend the week in a part of FL I would never otherwise visit. Plus, Brian and I just bought the book Oddball Florida, and a lot of the attractions are up that way. It will be an interesting week! The thing on my head is the kercheif I made over the weekend with my birthday knitting needles. It was my first experience increasing stitches and using circular needles. I love the circular needles! They were especially useful to transport the project to Brian's parents' house (where they watched the Superbowl and I sat in an easy chair knitting like someone's grandmother). | Two Things |

(The following is not a paid advertisement; simply a bit of nerdiness.) Pictured here are a couple of my favorite things this week: Yes to Cucumbers Soothing Eye Gel & Badger Sleep Balm. I'm not an insomniac, but I do often have trouble telling my brain to settle down when it's sleepy time. The balm smells great and subtly nudges me to calm down. And no matter how much sleep I get, I've inherited a bit of the poofy/dark-circle-y eye syndrome, and the gel really seems to help with that. That's the end of today's (unpaid) product placement.
